This is a very informative, detailed article on how to store your vegetables. The author includes some interesting historical information on how vegetables were stored before they were so readily available in the grocery stores. I am going to try the pumpkins under the bed old-fashioned way! The author even includes a few links to get more info on vegetable storage.

Every fall/winter I buy squash by the bushel, as it can keep longer. I use it for my meals between November and February or so, as I can't get enough of it. I've moved my storage of squash around a few times, so this is helpful and useful to me. It's good to get a temperature and humidity range for how to keep those savory, sweet squash from going bad. Mmmmmm. Just thinkin' about them is making me hungry.
